Today I’m excited to share a simple recipe for the holidays! My friend Chrissy of Chrissy Marie Blog and I have come up with two super simple desserts (or breakfast, if you are a cool mom) ideas! Just a side note if you aren’t following Chrissy you are missing out. Everything she posts is gorgeous.

I wanted to do a spin on a few holiday classics while allowing the boys help…so we are making mini apple and pumpkin pies! You can easily decorate for any holiday, switch to cherry filling or add colorful decorations!
After searching Pinterest for 3 mins I found the easiest apple pie recipe that I felt like I couldn’t mess up! Follow her instructions – step by step and you will have you apple pie filling in under 15 minuets. Once it has finished remove from your stove top and transfer to a bowl to cool.

The pumpkin pie filling was easy since last year I was pumpkin obsessed….mix the following ingredients!
- 1 Can of pumpkin puree
- 1 Tablespoon of agave
- 1/8 of a cup of brown sugar
Onto the pie crust, as I mentioned before – simple. Buy the pre-made pie crusts. I used my Silplat baking sheet to set the crust on, its way easier to get the little pies off of! Plus my favorite baking sheet for cooking- nothing will ever stick to this and its been indestructible for years!

So now you have your apple pie mix, pumpkin pie mix and your crust. Grab any cookie cutter and start cutting. Each batch = two pie crusts and with my large cookie cutter I could make 7 pies!
Follow the cooking instructions on the pie crust. If you want to add a glazed look to your pies mix 1 egg white + 1 tablespoon of water then mix and brush on just before putting them in the oven.
Once the “pies” have cooled it is time to let the kids do their thing! Adding sprinkles and syrups!

You will have extra apple pie filling – YUM. For the extras I am putting some in these mason jars AND grabbing a package of cinnamon rolls then giving to family as they leave on Thanksgiving. So easy to have a breakfast the next morning!
