Happy weekend babes! If you’ve been following along on socials you know that I have made a movement these past few months to start exercising, eating right, and just making better choices for myself. Being a working mom I had every excuse in the world to not put myself first. Work. Two little boys. A house and laundry to keep up with. Social life. I just wasn’t exactly where I wanted to be… forcing my jeans to go on, changing tops 1000 times to get one that fit correctly, not feeling puffy. (sound familiar?)
I was wondering how could I possibly fit eating healthy and exercising into my life.
I needed this to fit into my life vs adding on another thing.
Luckily, the internet is a magical place and you can find your people. I found Kellar – I think of her as my fit bestie (not sure if she feels the same ha)! Kellar and Jamie are the brains, chefs, and fitness gurus behind Clean Kitchen. Clean Kitchen has a few components; a cookbook , a seasonal 12 week challenge, and Versus Gym.
So in my quest to be healthy I dove straight into the Clean Kitchen cookbook to find a healthy Mexican dish. These girls have taken normal foods that we all want to eat and made them into healthy versions, without 10,000 ingredients.
The three best things about this meal:
my family loves it | quick and easy to make | tastes like it’s bad for you, ha!
Mexican Lasagna
Prep Time : 10 minutes
Cook Time : 25 minutes
Ingredients
2 lbs ground turkey cooking spray
1 bell pepper, chopped 1 can of Rotel
1 onion, chopped 1 can of fat-free refried beans
2 tbsp. minced garlic 6 Flatout fold-it wraps
1/2 cup of parmesan and mozzarella cheese taco seasoning
1 cup plain nonfat Greek yogurt garlic powder
1 egg pepper
Directions
Preheat oven to 350 degrees.
Saute onion, bell pepper, and garlic in coconut oil spray, and as they cook add meat and brown.
While meat mixture is browning, in a separate bowl mix together yogurt, egg, and 1/4 cup parmesan.
Once meat has browned, add seasoning and Rotel. Remove from heat and mix in beans.
In a well-coated 9×11 baking dish, layer like lasagna, working from the bottom up : wraps, meat mixture, yogurt mixture, wraps, meat mixture, yogurt mixture, and cheese.
Bake 25 minutes, then before serving broil on high for 3-4 minutes.
Remove, let cool briefly, and serve.
Seriously, your family will fall in love over this meal!
